Handy, Budget-friendly Lunch Recipes

When you have a lunch box and an ice pack, anything goes.  You can carry anything around with you since the contents will be kept at adequate temperatures. 

So, for each lunch combine at least one food item from each of the Food Guide groups.

  1. Don’t forget to include grain products (whole grain bread, rice, cereal or pasta);
  2. Fruits and vegetables (preferably fresh, canned or juice);
  3. Dairy products (milk, chocolate milk, cheese or yogurt); and
  4. Meat and substitutes (meat, fish, chicken, eggs or legumes).

Gorilla Munch

  • 8 slices of bread
  • 5 slices of ham (approximately 150 g/5 oz.), cut into strips
  • 250 mL (1 cup) grated cheese (cheddar or mozzarella)
  • 10 mL (2 teaspoons) butter

Toast the bread slices in the toaster and press them lightly. Butter one side only of 4 bread slices and place 2 slices, butter side down, at the bottom of a well-buttered loaf pan measuring 10 ¼ in x 4 in (26 cm X 10 cm). Top with approximately a third (1/3) of the ham and a third (1/3) of the cheese. Repeat, alternating the layers and pressing each lightly.  End with the 2 remaining buttered slices, butter side up. 

Bake in oven at 350°F for 20 minutes or until golden and hot.  Allow to cool. Turn pan upside down, onto a plate.  Cut into slices.  Yields 10 slices. 

Note: For mustard lovers, various mustards such as Dijon, old fashioned, beer, yellow and onion can be substituted for butter.
